Corned Beef & Cabbage!

I know it’s St. Patty’s Day, but in case you haven’t noticed, I’m only recognizing the obscure, under-appreciated holidays this prime-numbered year.  You’re probably already sloshed on your second case of green beer, swimming in a green river wearing shamrock trunks and matching nipple pasties while I’m trying to recognize the honored timeless tradition of Irish food.  Happy Corned Beef and Cabbage Day!

Today, I learned the “traditional” Irish dish corned beef and cabbage is actually the ireland-654983_1280Americanized version of the original dish cabbage and pork?!  My sources tell me that when Irish immigrants came to America, beef was cheaper than the traditionally used salt pork or bacon joint, therefore beef entered the stew pot instead. Just another way immigrants adjusted to life in America and left their fingerprint on American culture.

So, pre-line your gut with a healthy portion as you continue to fill up on Guinness and several unnaturally green beverages.  Pretty soon it will be midnight and you’ll be upchucking it all bear hugging the porcelain god after you’ve exceeded the limits of your gut, tolerance and the patience of your friends.
